Hi! This is Mugen House, an all-you-can-eat Japanese restaurant nestled in Adelaide CBD, is on the lookout for an experienced professional to lead our team as a Restaurant Chef.

At Mugen House, we pride ourselves on delivering an unparalleled dining experience. Situated in a sprawling 280m² space, our restaurant can comfortably accommodate up to 150 guests, offering a delightful array of sushi, sashimi, cooked food, and an assortment of Japanese delicacies, as well as Japanese soft drinks, Saké, and wine and beer.

Operating 7 days a week for both lunch and dinner, we're committed to innovation and sustainability, fostering a collaborative and growth-oriented work environment.

Position Overview:

As our Japanese Restaurant Chef, you will be in charge of our day-to-day kitchen operations, using your culinary expertise and exceptional skills in catering to drive the success of our dynamic team.

Role Responsibilities:

1. Ingredients ordering and management: Keep accurate records of ingredient inventory levels, and ensure freshness and sufficient supply of ingredients.

2. Kitchen management:

• Supervise the work of kitchen staff, lead and coordinate a diverse team of staff, and ensure efficient collaboration among personnel in various positions.

• Train and guide the kitchen team to improve employees' cooking skills and work efficiency.

• Develop and implement food safety and hygiene standards to ensure a clean kitchen environment.

3. Cooking and production: Personally prepare and supervise the cooking process of key dishes, including teppanyaki, steamed dishes, fried foods, and desserts. Able to ensure that the taste and appearance of each dish meet restaurant standards under pressure, and ensure timely delivery.

4. Menu development: Participate in menu development under the arrangement of the director and receive training arranged by the company.

5. Customer service: Good customer service awareness, and being able to adjust dishes and services based on customer feedback.

6. Marketing collaboration: Work with our marketing team to expand the influence of the restaurant.

7. Weekly job report: Report to the director on kitchen operations every week.

8. Cost Control: Stock takes and wastage focused to obtain an accurate representation of food costs. Broad understanding of labour costs and ensuring budgets are kept.

Requirements:

• Qualification: Certificate IV in Commercial Cookery or Kitchen Management, and a Diploma in Hospitality Management or above. Equivalent overseas qualifications are also accepted.

• Experience: Bring a minimum of 3 years of cook and kitchen management experience in famous Asian restaurants, and at least 2 years of experience as a chef or in a similar role

• Knowledge of Japanese cuisine and culinary techniques

• Proficiency in cooking techniques required for Japanese cuisine, including tempura, steak, and teppanyaki-style cooking concepts and principles.

• Ability to independently prepare all types of ingredients, including cutting of vegetables, fish, steak, and seafood.

• Proficiency in restaurant order management software.

• Strong leadership, communication, and customer service skills; Attention to detail, honesty, reliability, responsibility and pursuit of excellence.

• Willing to accept new skills, clearly aware of industry trends, keen on developing new dishes, and have strong learning ability.

• Language Skills: Fluency in Japanese & English, or Chinese & English is advantageous.

• Flexibility for working on weekends, public holidays and extra hours.

• With full Australian working rights.

• Australian Driver's Licence and a car: Occasional supplier visits to pick up some goods
